Instant Pot Cajun Pepper Shrimp

INGREDIENTS
- 1 Cup Della Basmati Rice
- 1 tbsp vegetable oil
- 1 small red onion diced
- 2 cloves garlic minced
- 1/2 lb raw shrimp
- 1 tbsp cajun seasoning
- ¼ tsp chili flakes optional
- 1/2 tsp salt
- 2 small bell peppers sliced (yellow, green, or red)
- ¼ cup vegetable or chicken stock
- chopped fresh parsley

Cook Della Basmati White Rice by rinsing your rice until the water becomes clear and add in what is shown in the video. Prep vegetables and shrimp.

Turn on the Instant Pot and press the SAUTE button. Let it heat up for one minute. Pour some oil into the pot. Add chopped onion and cook until it looks soft and clear. Add chopped garlic and cook until you can smell it.

Turn off the SAUTE setting and add a little water to the pot to deglaze it (this means to loosen the bits stuck to the bottom). Add diced bell peppers, shrimp, Cajun seasoning, chili flakes, stock, and salt. Stir everything together well. Put the lid on the Instant Pot and turn the vent to SEALING. Press the PRESSURE COOK or MANUAL button and set the time to 0 minutes on LOW pressure. The Instant Pot will build pressure and then stop cooking.

When it's done, carefully release the steam and open the lid. Serve the shrimp mixture over warm Della Basmati White Rice. Enjoy!
