Cajun Swai over Salad with Brown Basmati Rice

INGREDIENTS
- 1 Cup Della Basmati Brown Rice
- 1 Swai fillet
- 1 lime, sliced & juiced
- 1 jalapeno, sliced
- 2 garlic cloves, minced
- 1 tbsp canola oil
- 1 tbsp butter
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp chili powder
- 1 tsp cajun seasoning
- ½ tsp black pepper
- 1 cup salad mix

Cook Della Basmati Brown Rice as instructed. Prep veggies. Season swai fish on both sides.

Heat skillet at medium heat, add in oil & butter. Once melted, stri in garlic & jalapeno and cook until fragrant. Add in seasoned swai and cook it for 2-3 mins on each side. Set fish aside. Add in lemon juice and deglaze the pan with the garlic and jalapeno.

Serve with salad mix, brown rice, cajun swai and top with the jalapeno garlic lime sauce. Enjoy!
