Tangy Thai Beef Mint Salad over Basmati White Rice

INGREDIENTS
- 1 Cup Della Basmati White Rice
- 1 lb flank steak
- 1 tbsp olive oil
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp fish sauce
- 1 tbsp honey
- 3-5 mini orange sweet peppers
- ½ English cucumber, sliced
- ½ cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup roasted peanuts, crushed
- 1 tablespoon sesame oil
- 1 tablespoon chili flakes
- Salt and pepper to taste

Cook the Della Basmati White Rice by following the directions on the package. While the rice cooks, make the Thai-style dressing. In a big bowl, mix together lime juice, fish sauce, honey, sesame oil, and chili flakes. Set it aside. Next, slice your vegetables. Then, rub the flank steak with olive oil, soy sauce, and a little salt and pepper.

Heat a pan on the stove over medium-high heat. Once it’s hot, place the steak in the pan. Cook it for about 3 to 5 minutes on each side, depending on how well you want it cooked. Take the steak out of the pan and let it rest for 5 minutes. Then slice it thinly against the grain (this helps make it more tender).

In a large bowl, add your sliced vegetables like bell pepper, cucumber, tomatoes, and red onion. Pour the Thai dressing over them and toss until everything is coated.

To serve, add Della Basmati White Rice onto a plate, top it with the veggies and sliced steak. Sprinkle with cilantro, mint, crushed peanuts, and more dressing if you’d like. Enjoy!
