Garlic Ginger Tofu Broccoli Stir Fry over Brown Basmati Rice

INGREDIENTS
- 1 Cup Della Basmati Brown Rice
- 1 block extra firm tofu, pressed and drained, cubed
- 2 tsp neutral oil
- 2 tsp cornstarch, divided
- 1 tsp garlic powder
- 1/2 tsp dry thyme
- 1/4 tsp salt and pepper
- 1–2 cups broccoli, bite-sized
Stir Fry Sauce
- 1 tbsp hoisin sauce
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp maple syrup
- 1 tbsp rice wine vinegar
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 1/4 cup water

Cook the Della Basmati Brown Rice by following the instructions on the package. While that’s cooking, get your vegetables and sauce ready.
Now, mix the rest of your stir fry sauce ingredients in a bowl, including the other teaspoon of cornstarch. Use a whisk or fork to stir really well so there are no lumps of cornstarch.

In a container with a lid, add 1 teaspoon of cornstarch, garlic powder, thyme, salt, and pepper. Mix it all together. Then add your tofu, close the lid, and gently shake the container to coat the tofu with the seasoning.

Heat a large skillet over medium-high heat. Add some oil and let it warm up for about a minute. Then, place your tofu pieces in the pan in a single layer. Let them cook without moving them for about 3 minutes until they turn golden brown. Flip the tofu and cook the other side for another 3 minutes.
Next, add the broccoli to the pan. Stir it around often so it cooks evenly. You’ll know it’s ready when it turns bright green and the stalks get a little lighter in color. Pour your stir fry sauce into the pan. Stir everything together so the tofu and broccoli are fully coated. Keep stirring until the sauce thickens, about 1 to 2 minutes. Then, turn off the heat.
