Tofu Cabbage Stir Fry with Basmati Brown Rice

INGREDIENTS
- 1 Cup Della Basmati Brown Rice
- 1 tbsp soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp rice wine vinegar
- 2 tsp maple syrup or sugar
- 1/2 tbsp sesame oil
- 1 tsp vegetable seasoning/bouillon
- 1–2 tbsp canola oil
- 2 scallions, whites and greens separated
- 1 red chili pepper, sliced
- 2 cloves garlic, minced
- 1/2 inch ginger, minced
- 1 block of super firm tofu (pressed and drained)
- 1 tsp smoked paprika
- 1/2 tsp ground coriander
- 2 cups green cabbage, roughly diced

Cook the Della Basmati Brown Rice by following the directions on the package. While the rice is cooking, get your vegetables ready. In a small bowl, mix together soy sauce, vinegar, maple syrup (or sugar), sesame oil, and vegetable seasoning or bouillon. Stir it all together and set it aside.

Heat a large skillet on the stove and add some oil. When it’s warm, add the white part of the green onions and the chili pepper if you're using it. Cook them until the onions start to get soft. Add the garlic and ginger, then cook for about one more minute until it smells really good.

Crumble the tofu into the pan and stir it around. Sprinkle in the paprika and coriander, then mix it all so the tofu is coated with the spices. Keep cooking the tofu for about 3 to 5 minutes. Now, add in the shredded cabbage and stir it all together.
Cook the cabbage for around 4 minutes until it starts to get soft. Then, pour the sauce you made earlier over the tofu and cabbage. Stir everything together so the sauce soaks into all the tofu and veggies.

Serve the tofu mixture over your cooked Della Basmati Brown Rice. Sprinkle extra green onions on top if you want. Enjoy your meal!
