Beef & Mushroom Stir Fry with Basmati Brown Rice

INGREDIENTS
- 1 Cup Della Basmati Brown Rice
- 8 ounces flank steak, sliced
- 1 tbsp water
- 1 tsp cornstarch
- 1 tsp vegetable oil
- 2 tsp oyster sauce
- 1-1 ½ cup beef stock
- 1 tbsp soy sauce
- 1 tsp dark soy sauce
- 1 ½ tbsp oyster sauce
- ½ tsp sesame oil
- ½ tsp salt (or to taste)
- ¼ tsp sugar
- 1/8 tsp white pepper
- 1 in ginger
- 2 cloves garlic (sliced)
- 2 scallions white and green portions separated)
- 6-10 oz cremini mushrooms
- 1 tbsp Shaoxing wine
- 3 tbsps
cornstarch (mixed with 3 tablespoons water)

Cook the Della Basmati Brown Rice the way the package says. While it’s cooking, get your veggies ready.
In a bowl, mix the sliced beef with a little water, cornstarch, oil, and 2 teaspoons of oyster sauce. Stir it well so the beef is coated, then let it sit for 10 minutes.
In another bowl, mix the warm beef stock or water with soy sauce, dark soy sauce, 1 ½ tablespoons of oyster sauce, sesame oil, salt, sugar, and pepper. Set this sauce mixture aside.

Heat a pan until it’s really hot—just starting to smoke. Pour in some oil and swirl it around the edges. Add the beef to the hot pan and let it sear for 30 seconds. Then stir-fry the beef for another 30 seconds until it’s mostly cooked. Take it out of the pan and set it aside.

Without washing the pan, turn the heat to medium. Add a tablespoon of oil, then quickly toss in the ginger, the white part of the green onions, and the garlic. Stir for about 15 seconds, then add the mushrooms. Pour in a little Shaoxing wine (if using) to loosen up the flavor bits in the pan. Now, pour in the sauce mixture and stir. Let it simmer and stir once in a while so nothing sticks. Once the sauce starts to bubble, add the beef and any juices back into the pan. Slowly pour in about two-thirds of the cornstarch mixture while stirring. In just a few seconds, the sauce should get thicker. You can add more cornstarch mix if you want it even thicker, but move fast so the beef doesn’t overcook. When it looks ready, turn off the heat.

To serve, place a scoop of warm Della rice on a plate, then top it with the beef and mushroom stir-fry. Sprinkle chopped green onions on top and enjoy!
