Vietnamese Tomato Pork Chop with Brown Basmati Rice

INGREDIENTS
- 1 Cup Della Basmati Brown Rice
- 2 pork chops
- 2 cloves garlic, minced
- 2 roma tomatoes, chopped
- 2 green onions, sliced
- 2 tbsp soy sauce
- 3 tbsp brown sugar
- 1 tsp salt & pepper to taste
- 1 tbsp canola oil
- 1-2 tbsp water

Cook Della Basmati Brown Rice as instructed. Prep veggies. Season pork chops on both sides with salt & pepper

Heat skillet over medium heat and add in oil. Once hot, add in your pork chops and let it cook for 5-8 minutes on each side, depending on thickness. (press down on pork chops for even browning) Set side.

Add in green onion stalks, garlic and stir until fragrant. Stir in tomatoes and cook for a few minutes until softened. Add in soy sauce, brown sugar, water and stir all together. Let boil and then cover for a few minutes for the flavors to combine. Then add pork chops back in and ladle on the tomato sauce.

Serve with Basmati Brown Rice and garnish with green onions. Enjoy!
