Vietnamese Caramelized Ground Pork over Jasmine Rice

INGREDIENTS
- 1 Cup Della Jasmine White Rice
- 1 1/2 tbsp cooking oil
- 1/2 onion, diced
- 2 tsp ginger, minced
- 2 garlic cloves, minced
- 1 Thai chili, chopped
- 1 lb ground pork
- 5 tbsp tightly packed brown sugar
- 2 tbsp fish sauce
- 1 green onion, sliced
- Sliced cucumber & cherry tomatoes

Cook Della Jasmine Rice as instructed. Prep the vegetables.

Heat oil in a big pan on high heat. Add chopped onion, garlic, ginger, and chili. Cook for 2 minutes. Add ground pork and cook until it's no longer pink. Break it up as it cooks.

Add sugar and fish sauce. Stir, then let it sit without stirring so it gets golden and sticky. Do this a few times.

Put Jasmine rice, pork, cucumber, and cherry tomatoes on a plate. Top with green onions. Enjoy!
