Sweet & Spicy Lemongrass Shrimp

INGREDIENTS
- 1 Cup Della Basmati Rice
- 1 lb large uncooked fresh shrimp, peeled and deveined
- 1 large shallot, peeled and thinly sliced
- 1 stalk of lemongrass, slice into rings and finely minced
- 2 cloves garlic minced
- 1 tbsp ginger finely minced
- 1 red Thai chili seeded and cut into julienne
- ½ Tbsp of red chili flakes
- ¼ cup of water
- ⅓ cup of dark brown sugar
- 1 Tbsp of fish sauce, to taste
- 1 Tbsp olive oil

Prepare Della Jasmine Rice according to the package directions. Chop the shallots, finely mince the lemongrass, garlic, and ginger, and julienne the red Thai chili pepper.

Heat oil in a wok or skillet over medium heat. Add the shallots, garlic, and ginger, and sauté for about 2 minutes until the shallots are soft and fragrant. Stir in the chili flakes and minced lemongrass, cooking for another minute until the lemongrass releases its aroma.

Pour in water and bring it to a boil. Stir in the brown sugar and fish sauce, mixing well to combine. Let it return to a gentle boil. Add the shrimp to the skillet and cook for about 1 minute. Flip the shrimp and cook for another minute, stirring to ensure the sauce evenly coats them. Adjust the seasoning to taste if needed.
