Sticky Pineapple Chicken

INGREDIENTS
- 1 Cup Della Basmati Rice
- 1 lb chicken breasts or thigh, bite size chunks
- 1-2 tbsp flour
- ½ tsp salt and pepper, to taste
- 2 tbsp oil
- 15 oz can of chopped pineapple
- ¼ cup pineapple juice
- 2 tbsp soft brown sugar
- 3 tbsp dark soy sauce
- 1 tbsp tomato paste
- 1 onion, sliced
- 1 yellow bell pepper, sliced
- 2 cloves garlic minced
- 1 tsp minced ginger
- Cilantro chopped

Cook Della Jasmine White Rice by rinsing your rice until the water becomes clear and add in what is shown in the video. Prep vegetables. In a bowl, mix pineapple juice, brown sugar, dark soy sauce, and tomato paste. Place chicken chunks in another bowl. Sprinkle them with flour, salt, and pepper, then mix until evenly coated.

Heat oil in a large frying pan over high heat. Once hot, add the chicken. Cook, stirring occasionally, until the chicken is golden on all sides (about 5-6 minutes). Flip the chicken and cook for an additional 2 minutes.
Add onions and peppers to the pan and cook for 2 minutes. Stir in the pineapple chunks and cook for another 2 minutes. Add garlic and ginger, cooking for an additional minute. Pour the stir-fry sauce into the pan. Continue cooking on high heat, allowing the sauce to bubble and thicken. Stir occasionally.
This process should take about 5-6 minutes on medium-high heat until the sauce reduces and the chicken looks caramelized.
