One-Pot Lemon Herb Chicken Rice

INGREDIENTS
- 1 Cup Della White Basmati Rice
- 2 chicken breasts or thighs (boneless)
- 1 tablespoons butter
- ½ tsp salt and 1 tsp pepper to taste
- 1/2 teaspoons Italian seasoning
- 1 tbsp butter
- 1 small onion, diced
- 1 clove of garlic, minced
- 2 cups chicken broth
- juice of 1/2 lemon
- 1 tsp salt
- 1 teaspoon Italian seasoning
- Garnish: 1 tbsp fresh parsley (plucked) and pepper if desired

Pluck parsley leaves, and put them into a tiny bowl. Set it aside. Cut & squeeze one-half of the lemon into a bowl. Slice the other half and put the slices onto a plate. Dice onion and mince the garlic cloves.
In a bowl of chicken, sprinkle Italian seasoning, a partial amount of salt, and a partial amount of black pepper. Mix well.

Turn the stove to medium heat. Melt 1 tablespoon of butter. Brown the seasoned chicken pieces for about 2 minutes on each side. Transfer the browned chicken to a plate.
In the same pan, sauté the diced onion, then add the minced garlic.A dd the rice to the pan and stir it together with the onions and garlic. Melt another portion of butter in the pan. Pour in the chicken broth, the juice of the leftover lemon half, and the remaining Italian seasoning, salt, and black pepper. Stir everything together.
Cover the pan with a lid and let it cook for 20 minutes.

Plate your dish. Sprinkle green onions, place lemon slices over the rice and chicken before serving. Enjoy!
