DELLA ARBORIO RICE PUDDING

Della Arborio Rice
Boiling water
White Granulated Sugar
Vanilla Extract
Nutmeg
Cinnamon
Lemon Juice
Eggs
Heavy Cream
Whole Milk
Dark Raisins

1 Cup
2 1/4 Cups
1 Cup
1 Teaspoon
1/4 Teaspoon
1/2 Teaspoon
1/2 Teaspoon
2 Eggs
3/4 Cup
1/4 Cup
1/2 Cup

1. Combine Della Arborio Rice and boiling water in a sauce pan
2. Cover tightly and cook with low heat for approximately 15 minutes or until the water is absorbed fully into the rice and rice is soft to the touch
3. Pre Heat oven to 325 degrees
4. Grease casserole dish with butter (approximately 1 quart dish)
5. Whip the egg thoroughly with heavy cream and milk and add vanilla, sugar, nutmeg, cinnamon and lemon juice.
6. Add rice and raisins
7. Combine entire mixture and pour into the greased casserole dish and bake for 20-25 minutes or until the top is lightly browned.
