Brown Basmati Rice with Lemon

brownricepeas1 tbsp            Canola oil    
2 garlic          Cloves crushed or minced
3 tbsp            Finely chopped shallots        
2 tbsp            Lemon juice
½ tbsp          Lemon zest
½ tsp            Sugar
1 tbsp            Fresh parsley, finely chopped
1 cup             Della Brown Basmati Rice
2 ½ cups       Vegetable or chicken stock
Salt and pepper to taste

Heat the oil in a medium pot (with a lid), over medium high heat.  Add the garlic and shallots and cook stirring constantly for 1 minute or until the garlic starts to brown. 

Add the rice, vegetable or chicken stock, lemon juice, lemon zest, sugar, and parsley. Stir well.  Season with salt and pepper, cover pot and reduce heat to medium low.  Let the rice cook for 35-40 minutes, stirring half way through or until all the liquid has been absorbed and the rice is cooked.Serves 2-4
